What we do

What it is
Speak, and the words fall out of the air. The sentence you are still saying hangs weightless and grey, because the recogniser is still revising it; the instant it commits, each word becomes a rigid body and drops, burying the oldest thing you said. The interim and final split that every dictation interface throws away is the physics here: you cannot un-say a word that has landed.
